Yes! Winters CAN be a sweet and cozy time – with the right food and company to share it with, that is… We kick off the Glow Supplies with our MYHRU signature winter soup. The best thing? It’s super quick and easy to make but still chock-packed with skin-loving ingredients! Bon appétit! INGREDIENTS: red onion x 2 – finely chopped medium sweet potato x 2 – cut into chunks apple x 2 – cut into small chunks (keep the skins for extra fibre and the antioxidant benefits of Quercerin) vegetable stock (natural and preservative-free) sour cream – a few tablespoonfuls, before serving feta – crumbled, before serving pomegranate seeds – to sprinkle, before serving
METHOD:
In a deep pot, heat up coconut oil and fry onion until soft.
Add sweet potato and apple, and fry together for a few minutes.
Add the stock, with enough water to cover the vegetables.
Bring to the boil and simmer for 20 mins.
Wait for soup to cool, then blend until smooth.
Season wth salt, pepper and lemon juice to taste. (Add more water if too thick, then blend again.)
Serve into bowls and stir in the sour cream gently in a swirl (looks pretty!)
Finish off by sprinkling the crumbled feta and pomegranate seeds.
MYHRU TIP: The leftover soup makes for a fantastic sauce base for a chicken curry. Just add the skin-loving coconut cream/milk (good fats!), red & yellow peppers (vitamins) and curry powder – including turmeric – the most valuable antioxidant and anti-inflammatory spice of all.
