A childhood classic, but sans the cheddar. We don’t want to sounds cheesy, but just remember: nothing tastes as good, as healthy feels!
INGREDIENTS: (vegan version)
garlic clove x 1
1/4 cup nutritional yeast
cashews x 1 cup, soaked for 2 hours and drained
water x 1/4 cup
red onion x 1
maple syrup x 1 tbsp
salt and pepper to taste
wholewheat pasta – cooked and drained (*gluten-free for the love of gut)
METHOD:
Cut the onion into thin quarter strips and simmer in water with a dash of maple syrup, until sticky.
Place the garlic, nutritional yeast, cashews, salt, pepper and water in a food processor and blend until smooth.
Throw the pasta into a baking dish, pour the sauce over and stir in well.
Add the caramelised onions on top or stir into the mix.
Place under the grill for 2 minutes.
