CHIA BREAKFAST PUDDING

With cooler Autumn mornings fast approaching, this nourishing heart-warming porridge from Health Yourself is the perfect way to start the day, the whole-some way. CHIA!


INGREDIENTS: (vegan, gluten-free, dairy-free)

  • 1/4 x cup chia seeds

  • 1 x can coconut milk

  • 1/2 cup almond milk

  • 2 x drops of vanilla essence

  • 1 x Tbsp almond butter

  • 1 x banana (mashed)

  • 1 x green apple (finely chopped)

  • 1/2 x scoop of plant protein powder (optional)

  • hemp seeds (to sprinkle)

METHOD:

  1. Soak the chia seeds in coconut milk overnight in the fridge. (They will expand and create a gloopy texture – do not panic!)

  2. The next morning, transfer to a pot on medium heat.

  3. Add the almond milk. Stir well to combine the textures and allow to infuse for 2 mins.

  4. Next, add the vanilla essence and the nut butter. Continue mixing.

  5. Stir in some mashed banana (and protein powder, if desired).

  6. At this point, check your consistency and add more almond milk if needed.

  7. Transfer to a bowl.

  8. Sprinkle hemps seeds and green apple.

  9. Serve and enjoy!
