Who doesn’t like a yummy pancake for breakfast? Or lunch? Or even dinner! This easy versatile recipe will keep you satisfied and energised for hours while giving your skin all the beautiful nutrients it needs. You’ll be amazed how gooooood a flour-less and diary-free pancake can be!
INGREDIENTS: (makes 2)
eggs x 2
medium banana x 1
spinach (optional) x handful
Greek yogurt (full fat)
fruit (berries/mango)
nuts / seeds
honey / maple syrup
coconut oil
METHOD:
Mix eggs, banana and spinach in a blender.
In a frying pan, heat up coconut oil.
Pour in half the batter and swirl it around the pan to cover the whole bottom surface.
Cover with a lid and leave on low heat until quite set and ready to flip.
Heat up the other side for about minute, taking care not to burn.
Remove from the pan and cover with foil to keep warm, while you make the other pancake.
Smear some yogurt on top, spread some chopped fruit, sprinkle with nuts/seeds and drizzle for sweetness.
