A FRESH START..

…start of summer, that is! At last, the beautiful watermelon is in season again and we just can’t get enough of this thirst-quenching refreshing colourful vitamin-packed sweet & salty salad number! Please, dig in…

INGREDIENTS:

  • watermelon cubes (cold)

  • feta cheese

  • fresh mint

  • fresh lime/lemon

  • olive oil

  • balsamic glaze*

METHOD:

  1. Place watermelon chunks on individual plates or a large serving platter.

  2. Sprinkle crumbled feta.

  3. Add torn mint leaves (reserve whole ones for the centre piece).

  4. For the dressing: mix olive oil + half a lime/lemon juice and pour over the salad.

  5. Finish off with a flourish of balsamic drizzle (optional*)

  6. Enjoy the wonderful mix of these refreshing sweet & salty flavours!
